As well as texture and appearance, a sauce is most of all about the way its flavours partner whatever else is on the plate. Don’t use too strong an oil, such as extra virgin olive oil, or it will dominate the mayonnaise in a slightly raspy way. And make sure your eggs are at room temperature before you start because this helps to form the emulsion.
